ABODE is the product of a trained chef and a home cook who share a vision for new type of dining experience: Homestyle meets fine food.
Picture yourself at an intimate, relaxed dinner party surrounded by close friends and family. The loft-like setting is decidedly cool, with exposed worn brick and recycled wood picnic tables. Some of your favorite tracks – from Madonna to the Beastie Boys – are playing in the background, as you listen to the chefs thoughtfully describe to you what you’ll be eating throughout the evening.
Pork hocks are on the menu, and you’re learning about why this cut of meat was selected as well as how you can prepare it at home. There are platters of oysters and deviled eggs, just like mom used to make … only these are topped with freshly shucked uni. Lasagna comes later, filled with oxtail and sweetbreads.
It’s homestyle food, taken to the next level. It’s homestyle energy, kept right where it should be.
I am the home cook, Gregg Drusinsky is the trained chef – and this is our vision. Welcome to ABODE, our pop-up restaurant.
If you are unfamiliar with the term, it’s a temporary restaurant – sort of like a supper club. It’s especially great for young chefs who want to create an experience without all of the headache that comes with opening up a permanent space. Essentially, it allows us to focus on the food and the dining experience.
I never thought I’d be doing something like this. What do I know about running a restaurant? Not much – and truthfully, opening a restaurant is not on my life to-do list. But, dinner parties … turning them into a business … being able to cook the food that I love and create an experience for others to share … this is a dream come true.
Gregg and I met on the show, where we instantly connected, and a solid friendship has blossomed into so much more. We are true partners, in every sense of the word.
He’s a genius in the kitchen; there’s just no other way to say it. He’s been cooking since he was 15 – working at restaurants like Le Bernadin and Lupa, and both attending and teaching at culinary school. His food is insane, and getting to learn from him everyday is an incredible experience. We have a similar palate and enjoy the same food, so cooking together is natural and effortless. Most days, we pop out of bed at six in the morning, talking about new recipe ideas and planning future menus. We never stop. And we love it.
It’s another dream come true to be able to share a passion like this with someone you love, that’s for sure.
We are so thrilled to have a canvas on which we can design our idea of the perfect dining experience, and we’re even more excited to share it all with you.
I’ll keep you updated on everything ABODE here, and I’ll also be sharing home cook-friendly recipes for some of our favorite dishes we’re serving. Things are so crazy-busy that ABODE dishes are about all I’m working on right now, but I promise you’ll love the recipes and they’ll all be totally doable.
